When you’ve wandered enough, settle into one of Istán’s shaded central courtyard squares to enjoy local tapas rooted in tradition, such as conejo al ajillo (garlic rabbit) or migas (a rustic comfort food evolved from resourceful shepherds combining leftovers such as stale bread, olive oil, garlic and meats like chorizo or bacon, perhaps topped with a fried egg).
