The menu will include patatas bravas, tortilla, pimientos de padron, paella, a selection of Spanish cheeses, cured meats, jam\u00f3n, refreshing gazpacho, the famous Hispania fabada asturiana \u201cCasa Gerardo\u201d and the \u201cHay Festival Hispania veggie croquets\u201d, specially created by HISPANIA head chef Iv\u00e1n Ortiz for the festival and made of local ingredients. Not to be missed the typical Spanish chocolate con churros!<\/p>\n<p>To accompany their tapas, guests can sip a variety of favourite Spanish wines reining from different Spanish DO (Rueda, Albari\u00f1o, Mentrida and Rioja) choosen to to satisfy the most exquisite paladar.<\/p>\n<p>Spain has long been known for its excellent cuisine ranging from its culinary star produce, such as jam\u00f3n and olive oil, to the pintxos of San Sebasti\u00e1n, the paella of Valencia or the suckling pig of Segovia. The basis of Spanish traditional cuisine is good quality ingredients and simple home cooking, both of which are key elements of HISPANIA Hay Festival menu.<\/p>\n<p>Enrique Ruiz de Lera, director of the Spanish Tourist office in the UK, says \u201cBuilding on the success of Tapas Espa\u00f1a in 2013 and 2014, we are delighted to be returning to the Hay Festival for the 2015 edition with Spanish restaurant group HISPANIA. Last two years, the pop-up was one of the unexpected star features at Hay so the bar has been set very high for 2015.\u201d<\/p>\n<p>This year\u2019s pop up has been designed by London-based company Binom Arquitects.
